How Are You All Doing?

Hell everyone I am back here again doing some updates for my blog. I have been feeling bad this past few days and did not have a chance to make updates here in my blog. Today I am feeling really sick and I have not take any medicine because you know me I hate doing those. LOL, this morning I was coughing bad and my voice was almost out. I felt really cold even though it was not that cold inside the house. Anyway, that's all for now and I hope that you all have a great time.

Our Dinner Last Night

Last night I made dinner for my husband and Me. This is my first time to make this kind of dinner and I wasn't sure how it's gonna turn out. So on this recipe I had 2 Cornish bird which I cut in the middle to make it cook faster. Then for the sauce I mix one cup of concentrate orange, one cup of olive oil, 1/2 cup of soy sauce, 1 tsp. of pepper, 1 tsp. of some spices. You can actually put different kind of spice on the sauce just to make it taste good. I played on my sauce last night and put different kind of spice and turn out really good.

I preheated the oven to 425 and then bake the Cornish for 15 minutes into 425. Then after 15 minutes I turn the oven down to 372 and I bake mine for 30 to 45 minutes. And for my sides I had potatoes boiled in the big pan with chicken broth, with peppers (just a little for taste), then salt and 3 slice of butter. I boiled it until it's tender and then I smash it but not much. You can do either way if you just want the potatoes whole it's fine too. When I served the dinner they all love it and I was glad because I didn't know what's gonna be the result. That's all for now and you all have a great time.

Shrimp Creole

I saw this recipe about three weeks ago on food network but I didn't had a chance to take note on what I do need. So I went online get the recipe that way I can make this, this recipe is very easy and delicious. I got this recipe from the Patrick and Gina Neely.

Ingredients

* 2 tablespoons olive oil
* 4 garlic cloves, minced
* 2 large onions, chopped
* 2 stalks celery, chopped
* 1 green bell pepper, chopped
* 1 teaspoon cayenne pepper
* 2 cups seafood stock or shrimp stock
* 1 (28-ounce) can whole tomatoes, in thick puree
* Dash Worcestershire sauce
* Dash hot sauce
* 2 bay leaves
* Kosher salt and freshly ground black pepper
* 2 pounds large shrimp (about 32), shelled and deveined
* 4 tablespoons green onions, sliced for garnish

Directions

Heat a large heavy Dutch oven over medium heat. Add oil. Cook garlic, onions, celery, and green bell peppers. Cook until softened, about 5 minutes. Stir in cayenne and let caramelize. Add the seafood stock, tomatoes, Worcestershire, hot sauce, and bay leaves. Season with salt and pepper. Simmer for 35 minutes. Add shrimp and cook about 4 more minutes, until they are bright pink and cooked through. Garnish with green onions.

Parmigiano and Herb Chicken Breast Tenders

Below is the new recipe I found at Food Network. I love watching food network and when I see something that I want to make I always get the recipe online sometimes I write down the recipe while it's showing on the television. Anyway, below recipe is made by Rachel Ray, one of the chef that I like so much. That's all for now and you all have a great time.

Ingredients

* Olive oil, for frying
* 1 1/2 pounds chicken breast tenders
* Salt and pepper
* 1 cup all-purpose flour
* 2 large eggs, beaten with 1/4 cup water

Breading:

* 2 cups Italian style bread crumbs
* 1 cup shredded Parmesan
* 6 sprigs or stems fresh thyme leaves, stripped and chopped, 2 to 3 tablespoons
* 6 sprigs fresh rosemary leaves, finely chopped, 3 tablespoons
* 2 handfuls chopped flat-leaf parsley leaves
* 4 cloves garlic, finely chopped
* 1 teaspoon crushed red pepper flakes
* Chicken Parmigiano, recipe follows

Directions

Preheat oven to 350 degrees F. Place a nonstick cookie sheet in oven with a tin foil liner.

Heat 1/2-inch oil in a large nonstick skillet or frying pan over medium to medium high heat.

Season chicken tenders with salt and pepper. Wash hands. Place flour in a shallow dish. Beat eggs with water in a second dish along side the flour. In a third dish, combine the breading ingredients. Coat chicken in flour, then egg, then bread and cheese mixture. To keep your hands clean, ask for plastic gloves at the butcher counter. To ease your clean up, try using disposable tin pie tins for the flour, egg and bread crumbs.

Cook chicken until deeply golden on each side, 3 to 4 minutes. Transfer to cookie sheet in preheated oven and finish off for another 5 minutes cooking time. Cook chicken 5 or 6 tenders at a time in a single layer, adding additional oil if necessary. If the chicken begins to brown too quickly lower heat slightly. Serve chicken hot or cold with green salad or, complete as a Parmigiano.
Simple Tomato Sauce for Chicken Parmigiano:

* 2 tablespoons extra virgin olive oil
* 1 small white onion, finely chopped
* 3 cloves garlic, minced
* 1 (14 ounce) can chunky style crushed tomatoes
* 1 (28 ounce) can crushed tomatoes
* 1 cup chicken broth or stock
* A handful fresh basil leaves, torn into small pieces
* Coarse salt
* 1 1/2 cups shredded provolone
* 1/2 cup grated Parmigiano-Reggiano
* 1 pound spaghetti, cooked to al dente

Set water on to boil for pasta and prepare according to package directions for al dente. Before coating chicken, add oil, onions and garlic to a saucepan to cook medium low heat. Stir occasionally for 10 minutes while you are working on the chicken. Add both cans of tomatoes and a cup of chicken broth and bring sauce to a bubble. Reduce heat to a simmer until ready to serve. Stir in torn basil and season sauce with salt, to your taste.

Place a little of the sauce on the chicken tenders, top with the shredded provolone and Parmigiano. Place in oven or broiler to melt the cheese and then serve. Coat the hot, cooked pasta lightly with sauce then serve.

Our Christmas Picture Together

This picture was taken during our Christmas at my father-in-law. My step-mother just gave us this beautiful scarf so I thought it would be nice to have a picture of us together. Lexi got the pink one since that's her favorite color and I got a other one which is perfect for me. Yeah it will go on any color of clothes since it has mixed colors.
